On the first day of Christmas my true love gave to me, a stack of Purition pancakes and an Orange & Cranberry recipe!
On a serious note, who doesn't love a good brunch over the Christmas period? These fruity Orange & Cranberry pancakes are the perfect way to set yourself up for a busy day of festivities!
This recipe requires just 3 simple store cupboard ingredients, alongside your Purition. Not only are they packed with delicious seasonal flavour, but they're rich in protein & fibre to keep you full for hours!
INGREDIENTS
- 40–50g Purition Orange & Cranberry
- 250ml milk (we used Almond)
- 50g flour – any
- 1 tsp baking powder
- Optional toppings: Orange zest, cranberries & maple syrup
INSTRUCTIONS
- Whisk all the ingredients together until smooth.
- Heat 1 tsp of coconut oil in a non-stick frying pan on a medium to low heat.
- Add a tbsp of batter to the pan and cook until golden on both sides.
- When bubbles start to appear, it’s time to flip it over!
- Repeat until you've run out of batter. You should be able to make 5–6 medium pancakes.
TIPS & SWAPS
- Toppings? We used fresh cranberries, orange zest and a drizzle of maple syrup, but you can use whatever you've got. A dollop of yoghurt with berries is always a winner!
- No Orange & Cranberry? Try it with our Vanilla or Almond & Orange flavours instead.
- Gluten-free? Just swap the flour out for your choice of gluten-free flour!
